Cafe Rio
Hi everybody! Well, I just have to tell ya all I found these recipes for Cafe Rio. I made them a few nights ago and thet are the exact same thing! You gotta give them a try... The DRESSING: 1 ranch dressing packet (make like the pkg. says), 2 Tomatillos (tomato like vegetable with a husk around them), 1/2 bunch cilantro, 1 clove garlic, juice of a half of lime. Blend all in food processor and refrigerate. TASTES JUST LIKE IT. THE CHICKEN: 1 bottle Kraft zesty Italian dressing, 1 T. Chili powder, 3 cloves garlic, 5 lbs. chicken breast. Cook all together in crockpot and shred. CAFE RIO RICE: 3 C. water, 4 t. chicken bouillon, 4 t. garlic, 1/2 bunch cilantro, 1 can green chilie, 3/4 t. salt, 1 T. Butter, 1/2 onion, 3 c. Rice. ( I used minute rice and just added everything in when I put the rice in and then put the lid on and let stand.) Okay, its really good. Then I bought black beans and fresh tortillas. Try it out!

Update on our Family
Well, we hope everyone is doing good. We are excited at all the blogs we are starting to see, it is so fun to see everyones familys and actually be able to sort of keep in touch through them. Our family is doing good. Erik is the Employee of the Month this month. He will make fun of me for announcing it, but I think it is pretty cool. Ryder is now 1 year old and getting quite the little persnality! He can almost walk but prefers to crawl (its much faster!) He said his first sentence a few days ago. I walked in his room and he had crawled up on his mattress (we just have it on the floor instead of a crib) I looked at him and said, "Ryder, you did it.) He looked back at me and said "I did it". I was amazed, I think I about fell over. Now he says it all the time. He also says Tractor and light. He loves turning the lights off and on. He is growing so fast. We love every minute we spend with him. I am having a great time being a stay at home mom. We spend lots of time playing trucks and going to the Tree House Museum. Anyway, hope to hear from you all.

American Idol Tour
Well, me and Erik went to the American Idol Tour last night! It was really fun. Erik gave me tickets for my birthday since you know I am like the biggest Idol fan. We sat on the 5th row, and loved the show. Blake was really good, and Jordin (the winner) was too, but I think Melinda was the best and should have won it all! Anyway. We had a good time!
